Vacuum Frying

Vacuum Frying vs Deep Frying: Oil, Colour, Nutrients and Cost

How low-temperature vacuum frying compares with atmospheric deep frying for fruit and vegetable chips: frying temperature, oil uptake, colour, acrylamide and equipment cost.

Vacuum Frying vs Deep Frying: Oil, Colour, Nutrients and Cost
Quick answer

Vacuum frying cooks food at about 80–120 °C under reduced pressure instead of 160–190 °C at atmospheric pressure. The lower temperature keeps natural colour and flavour, reduces oil degradation and acrylamide formation, and—combined with centrifugal de-oiling under vacuum—typically yields chips with noticeably lower oil content. It costs more per kilogram of capacity than a deep fryer but makes premium fruit and vegetable chips possible.

Key takeaways

  • Vacuum lowers the boiling point of water so food fries at 80–120 °C.
  • Lower temperature protects colour, aroma and heat-sensitive nutrients.
  • De-oiling while still under vacuum is the main reason vacuum-fried chips are less oily.
  • Deep frying remains the cheaper option for high-volume potato products.

Banana, jackfruit, okra and shiitake chips with bright natural colour are almost always vacuum fried. To understand why, it helps to compare the two methods side by side.

How vacuum frying works#

Water boils at 100 °C at sea level. Pull a vacuum of around −0.09 to −0.098 MPa and water boils at roughly 40–50 °C. In a vacuum fryer, product is lowered into oil heated to only 80–120 °C, yet moisture still escapes quickly because it boils at a much lower temperature. When frying is complete the basket is lifted and spun in a centrifuge before the vacuum is released, so oil does not get pushed into the pores as pressure returns.

Why vacuum-fried chips usually contain less oil#

Most oil enters a chip at the end of frying, when it is lifted out and cools. Steam inside condenses, pressure drops and surface oil is pulled inside. In a vacuum fryer, centrifugal de-oiling happens while the chamber is still under vacuum, so much of the surface oil is spun off before that suction effect occurs.

Products that benefit most#

  • Sugary fruit that would caramelise at deep-frying temperature: banana, jackfruit, pineapple, apple, papaya.
  • Colourful vegetables: purple sweet potato, carrot, pumpkin, okra, green beans.
  • Mushrooms such as shiitake and king oyster.

Choosing a batch size#

Our vacuum fryers run from 5 kg pilot units for recipe development up to 300 kg-per-batch production machines. A common path is to prove a recipe on a 5 kg pilot fryer and then scale to 100 kg or 300 kg batches.

When deep frying is still the right choice#

If you make high-volume potato products where golden colour is expected and cost per kilogram is the main driver, a continuous atmospheric fryer remains hard to beat. Many plants run both: atmospheric for potato and vacuum for fruit and vegetables.

FAQ#

What temperature is used in vacuum frying?

Typically 80–120 °C oil temperature, with a vacuum of about −0.09 to −0.098 MPa.

Are vacuum-fried chips healthier?

They are fried at lower temperatures, which reduces acrylamide formation and oil degradation, and they usually absorb less oil thanks to de-oiling under vacuum. Overall nutrition still depends on the product and recipe.

Can a vacuum fryer make French fries?

Yes, but for high-volume, golden potato products an atmospheric continuous fryer is usually more economical.
